An Asian Dinner For ✌️

I'm gonna keep this short because I'm tired and I'm on an iPad. (Fleet and I just had a long conversation about how frivilous iPads are... Even though we own one. Maybe that's why I'm tired.)  

This meal came together slowly but happily. I was just going to make an Asian dish but then I had an epiphany to put a fried egg on top. It wasn't so much an epiphany as it was brainwashing/subliminal messaging/mind control because every picture on Instagram has a fried egg on top. Really I'm just jumping on the bandwagon. See what I'm doing? I'm not keeping this short. 

 

Recipe:  

toasted sesame oil (or olive oil) 

1 shallot, diced

1/2 tbsp fresh ginger, thinly sliced

3 cloves garlic (or more, if you're into that!)

2 leeks

carrots, peeled

broccoli

green peas 

brown rice noodles  

1 chicken breast

   

for the sauce: 

equal parts soy sauce & rice vinegar

peanut butter

toasted sesame oil

a few red pepper flakes  

 

for the garnish:  

fry an egg 👍

cilantro  

Sesame seeds  

fresh alfalfa microgreens from the farmers market (just kidding, this meal doesn't really need that- I was just excited to use those. And they were tasty!)  

 

mix all that stuff together and serve it to your best friend. :)
